cut into steaks across the fillet and fry quickly, medium should be good.

Sushimi use the lighter coloured part of the fillet. Serve with soy and wasabi. also great for Island style raw fish. Cube and soak in lemon juice salt and pepper for anything from a minute to a overnight then mix with any or all of chopped onion tomato basil corriander garlic chilli, fish sauce then add coconut cream fresh is best but canned OK.

Also nice seared or even smoked then made into fish pie.

great for Thai style fish cakes too.
