we cook this quite often - something a little different you could try maybe?
The chervil is easily replaced by parsley or Basil :-)

Fish balls with lemon & Chervil sauce

For the sauce:
100ml cream
400ml Fish stock
2tbsp corn flour
1 lemon - zest & juice separated
1 egg yolk
1 bunch of chervil

For the fish balls:

800gr fish fillets
100ml cream
2 eggs
salt & white pepper

1) For the sauce, combine fish stock
with cream, cook over medium heat
until reduced by half. Set aside.

2) Wash fish fillets and dry well,
chop into rough cubes. Purree these using
your blender, adding the cream, eggs &
2 Tbsp of the lemon juice towards the end.
Season with the salt & pepper and chill.

3) Bring a large pot of salted water to boil.
Lower temp until water is just simmering.
Take your fish mix out of the fridge
and use your hands to shape about 2TBSP
of the mix at a time into balls.
Place the balls into the simmering water and cook
for about 6-10 minutes, depending on size.

4) Meanwhile - add the cornflour & lemon zest
to the reduced sauce, bring back to boil stirring
well and remove from heat - leave to cool
slightly (5minutes) Mix the egg yolk with the remaining lemon
juice and whisk into the sauce.

Serve the fish balls with the sauce -this dish is fab accompanied by just boiled new potaotes or rice.
Serve with extra wedges of lemon and green salad
or veges such as Asparagus/Brocolli/green beans.

We like fish with grilled tomatoes, or with home made coleslaw, or if you have to have carbs with it, mashed spuds with a fried egg on top, so you can chop the soft egg thru the spud, its an odd mix that works quite nicely with fish.

Since I never have chips with my fish here are some ideas:
Mixed green salad and fresh bread
Greek salad and small new potatoes roasted whole
Green bean salad and kumara
Coleslaw and potato gratin

You can even serve fish in a curry with rice
Or make small parcels of foil and add fish fillets, veges and garlic/chilli and bake, serve with fresh bread or rice

I do sweet and sour fish which is lovely. You basically cut the fish into pieces and flour, egg and crumb, but add sesame seeds to the breadcrumbs. I make a sweet and sour sauce to serve with this on rice or sometimes just on it's own.

Having snapper for tea tonite... got the last of the jersey bennies and agria from the garden so making mushy chips..chips cooked slowly in an electric frypan with the lid on so the condensation makes them mushy rather than crisp.. then chicken salt added...got some tomatoes frying in some olive oil with black pepper and basil and on the side I get to use my new "Ninja" to make my salsa.. tomatoes, Lebanese cucumber, green, red, orange and yellow capsicum , spring onions all from the garden..a red onion or two, some white pepper, salt, basil and parsley added to the mix... magic bullet may be relegated to the back garage cupboard...:}

Had this with fish the other night, it's a staple dish in the West Indies, and eaten instead of potato.
Macaroni Pie
1 C macaroni elbows
2 C grated cheese
1 can evaporated milk
1 t salt
Pinch sugar
2 eggs lightly beaten
1 white onion, finely diced and sauted untill soft
Cook macaroni untill al dente, approx 8-9 mins, place 1/2 the cooked macaroni in a greased oven proof dish, then cover with half the cheese. Mix together the evaporated milk, salt, sugar, beaten egg and the soft onion and pour over the macaroni and cheese, then top with remaining cheese. Bake at 200 for 30mins. Tasty!
