I was going to make a beef wellington but dont really have the time with 3 kids begging for attention. Any other suggestions on how to not ruin it please??

Was looking for something different from just roasted, but hubby is now getting the ingredients I need to do a beef wellington so I am sorted :)

Make slices part way through the meat, all along the length. Slice beans, capsicums, onions. Saute in a little butter then pack the veges into the slices. Drizzle garlic, basil and a bit more butter over then bake.
