Apple muffins ... couldn't be easier.Mix together 1 cup stewed apple,1/2 c oil,1/2 c brown sugar,1 tsp mixed spice,large handful of raisins and 1 egg.Add 1 and 1/3c flour and 1 tsp baking soda.Stir to combine.Put into muffin cases and bake at 190 degrees for about 25 mins.Lovely as muffins,or warm for dessert with a blob of yoghurt or icecream :-)

Basic Muffin Mix
Bowl 1 4 tsp BP 2 C flour 3/4 C Sugar
Bowl 2 1/2 C Oil 1 C Milk 1 egg
Add bowl 1 to bowl 2. Just mix. 200 for approx 15 mins
Add cocoa, friut etc as you wish:)
