Basic baking question please - recipe says

beat oil and brown sugar for 3 mins - making a carrot cake - what consistency am I looking for - my beater is older and how do I know if 3 mins is enough -cheers

It's quite different from creaming butter and sugar.It will just look gloopy.If you feel like beating it a bit longer, it won't do it any harm :)

did something wrong - used the donna hay recipe and it came out about 1inch high!!!

Oh no! Hey it can happen to us all. Here is an easy carrot cake recipe(with no creaming*)I have used for years, even in my catering days and it is a goodie. (I only post what I have personally used.) Hope you have success with this. Good luck. Hope you will try and enjoy.

Carrot Cake.
Place in a bowl:
1/2 cup white flour
3/4 cup raw sugar
1 tsp baking powder
1/2 cup wholemeal flour
1 tsp baking soda 1 tsp cinnamon.

To this add 2 beaten eggs, fold to combine,
Then add:
1/2 cup cooking oil
1 1/2 cups grated carrot.
fold mixture lightly together.
pour into a well greased pan (I normally use a 7-8in round pan, or a ring tin)
Bake at 180deg for 30mins.
*This makes a very soft cake, beautfully moist*
If you require a very deep cake, it may pay to double the above mixture.
Icing:
Beat together
50g cream cheese
25g butter
1cup icing sugar
1/2tsp vanilla

thanks kinna -will give it a try - really appreciate recipes from someones tried and true collections - you can find heaps on the net but have no way of knowing if they are any good
