Pudding help (using hot cross buns) ideas...

we made hot cross buns last night (fail) and they are very hard and crusty but they taste lovely, I really dont want to throw them out would be waste, so need to "refashion" them LOL would it be OK to make a bread and butter pudding out of them, bit of liquid in a pudding would soften them up, or anyone else have other ideas what to do with them?

bread and butter pudding- great.- chop them up a little and pour hot milk over them to soften for a while before adding the eggs.yummy!!

Oooh, I would probably make a bread and butter pudding with marmalade etc.

Here's a recipe from one of our 1997 newspapers.....
"YUMMY BUN PUDDING"
4 stale hot cross buns, cubed
2 eggs
½ cup sugar
1 cup milk
1 tsp each ofcinnamonandvanilla essence
a few sultanas

Place the bun cubes in a lightly greased ovenproof dish.
Beat together the eggs, sugar and milk, then stir in the cinnamon, vanilla essence and sultanas.Pour the mixture over the bun cubes.
Bake at180ºCfor35-40 minutes, until set and puffed.:-))

Marmalade Brioche Bread & Butter Pudding

2 cups cream
1.5 cups milk
1/2 cup caster sugar
1 vanilla bean
5 eggs
3 mini brioche (Or fruit bread or buns or croissants)
1 orange, halved, thinly sliced
Glaze
1/4 cup orange marmalade
1 tablespoon Grand Marnier

Preheat oven to moderately slow, 160C. Lightly grease a 2-litre ovenproof dish.

In a medium saucepan, combine cream, milk and sugar. Split vanilla bean in half lengthways. Scrape seeds from bean. Add bean and seeds to pan.
Stir over medium heat for 5-7 minutes until sugar dissolves and mixture is hot. Remove and discard bean. Transfer mixture to a large jug. Cool slightly.

In a large bowl, whisk eggs until frothy. Gradually whisk in hot milk mixture.
Layer brioche and orange slices alternately and slightly overlapping in prepared dish. Pour milk mixture over.
Place in a large baking dish. Add enough boiling water to come halfway up the sides of the dish. Bake for 55-60 minutes until custard is set when tested with the tip of a knife (if custard is set, knife will be clean when removed).

Glaze. In a small saucepan, combine marmalade and Grand Marnier. Stir over low heat for 2-3 minutes until combined. Strain into a small bowl. Brush glaze over hot pudding before serving.
