Caramelised onions

6 red onions
1 cup of water
good splash of olive oil
1/2 cup balsamic vinegar
1/2 cup brown sugar
pinch salt

Cook slowly stirring every now and then for about an hour or until the liquid evaporates

Cut as many onions as you want into thick rings. Pour about 3-4cm of water into a saucepan or frying pan and add the onion rings.

Bring to a simmer, place the lid on and simmer slowly till almost tender. Take the lid off and continue simmering, stirring often, until the liquid is gone.

Add a few tablespoonfuls of balsamic vinegar and a couple of tablespoonfuls of brown sugar. Stir through well and heat again till the sugar is dissolved. If needed, add more balsamic vinegar and/or brown sugar to your taste, then keep simmering till the liquid is gone.

Season to taste.. and serve.

This can be made a day or so before needed, and reheated, without a lid on, when needed.
