Anyone notice when making relish etc...

the new season onions take a little longer to cook and go soft.
I dont mind too much, as they give a bit of a crunch....
3rd lot of green tomate relish on the stove as i type.
this time with white vinegar and some tumeric for colour and pinaapple...

relish turned out yummy. hope it was ok to make it with white vinegar instead of brown tho.

I've been busy too! Made Nan's summer pickle last week with a heap of cucumbers we had growing on the muck heap.Then tonight tried Courgette Pickle for the first time ever.Was a bit of a learning curve as I found out they have much more water in them than the Cuc's.Had to strain a bit of liquid off, looked Ok and smelled great going into the jars, so time will tell.
Shame you don't get a lot more jars from all your hard work!

I hope you peeled them...holmsies... I found the skin on them to be tough.

Um no. Better peel them for the next batch then! I cooked it for quite a while hoping to evaporate some of the liquid so hopefully that will have softened the skins a bit.
