Kingfish question ??

Hi there, i have been given 3 massive King fish steaks, and would love to have them for dinner tonight, my question is, how do i go about cooking them to get the best out of them, Ive never cooked these before, but always loved them in restaurants. Any help would be hugely appreciated. Thank you :)

If fresh , great...otherwise ensure thawed out...BBQ plate or ribbed skillet best ...Lots of black pepper on each side and a pinch or two of sea salt... little oil and cook till golden brown one side.. then turn onto herbed butter and cook, then turn back onto another knob of herbed butter.. DONT OVERCOOK.!!
Herbed Butter.=="soften" (not melt) some butter and add 2 cloves of crushed garlic.. 2 tbsp of very fine chopped parsley.. good pinch or two of cayennepepper and a tsp of lemon juice.. mix all the well together and create a log by wrapping in cling wrap and place in freezer for quick chill/freeze.......
