KUMERA AND ORANGE SALAD

Would appreciate easy receipe for this Salad.

Kumera and Orange salad great way to use up leftovers to.
Orange kumera,2 oranges,red onion, spring onions or chives,2 tblsp red wine vinegar,2 tblsp oil, 2 tblsp sugar, s/gr pepper.
Peel kumera cut into thick chunks cook in steamer till cooked crunch tender (dosen't take long). Cool. Remove orange zest and keep, then cut skin off and cut into segments. Keep any juice if there is any. Peel onion slice thinly into rings. Chop chives or slice spring onions. Mix redwine vinegar, oil, salt pepper, sugar, orange zest and orange juice if you have any all together. Put cooled kumera in a bowl add onion rings, orange segments, chives or spring onions pour over pre mixed dressing and toss well to coat everything. Chill well before serving, can add a little chopped parsley for colour if you have it..

my one; cooked cubed kumara, cook some small pieces of bacon and pour bacon and all over the kumara mix around, then when cool add orange, onion. dressing sour cream and mayonnaise with loads of pepper.

Beetroot Salad with Orange
Ingredients:
600g of beetroots .. 1/4 tsp of white pepper..1/4 cup of orange juice..1/4 tsp of mustard powder..1 tbsp of salad oi..l1/2 tsp of orange rind..
Salt to taste..1/4 cup of spring onion rings..
Method:
Boil the beetroots. When cool, peel and dice them into half-inch cubes. Chill them. Mix orange juice, oil, salt, pepper, mustard powder and orange rind in a bowl and whisk till the mixture is homogeneous... Pour the dressing over the beetroot pieces and garnish with rings of spring onion....

This is really nice:

Kumara & Orange Salad
Ingredients:
700g Kumara
1/2 Tsp Salt
125g Bacon
2 Oranges
2 Tbspn Raisins or Sultanas
1/4 Tsp each salt and pepper
1/2 Cup of Dressing Of Choice


Directions:
Peel Kumara and cut into large chunks.
Sprinkle Kumara with Salt and steam for 12-15 minutes or until tender.
Remove when cooked and cut into 2-3cm cubes when cool.
Fry the Bacon until crisp. Remove from pan and cut into small pieces when cool.
Fillet the oranges*.
Add Kumara, Raisins/Sultanas, Salt and Pepper to the bowl containing the filleted oranges.
Add Dressing. Stir well to combine.
Scatter Bacon pieces on top.
Refrigerate for 1-2 hours.
Stir again just prior to serving.

Serves 6 as an entree or 4 as a main.

*How to Fillet an Orange:
Cut skin off with a sharp knife and cut away all the white pith
Over a bowl, slide the knife down the membrane that separates each orange segment, cutting from the edge to the middle on both sides of each segment. This will separate the segments from the membrane.
Drop the segment in a bowl.
Continue this process until all the segments have been cut out.
Squeeze all the juice from the remains of the orange into the same bowl as the segments.

ORANGE AND KUMERA SALAD


Any type of kumera, preferably the orange ones.Partly boil chopped up kumera (cut as if doing potato halves) until partially cooked.Put on tray in oven with some oil and roast until brown and cooked (don’t over cook),
Let cool then cut into cubes.
Completely peel about 3 good sized oranges and cut into cubes.
Then layer the salad in a bowl starting with kumera, then oranges then some sunflower seeds (or cashew nuts or pine nuts), as well as pouring over a small amount of Bit on the Side, Sweet Mustard dressing.Keep on layering and when bowl is full top with red onion rings and some parsley.
