Home made pickles?

like a bread and butter pickle or tomato relish ect - personal recipes that are yummy (with crackers and cheese, on bread ect)?

I make the following beetroot Relish which you may fancy as it is nice on cracker with cheese.

Beetroot Relish
Delicious with cold meats or on crackers. serves many prep 10 mins cook 20 mins
6 x beetroots, cooked (with skin, roots and stalk attached in water) and then peeled
6 x onions
2 cup vinegar (cider)

2 cup sugar
1 tsp salt
1 tsp ground mixed spice
pinch cayenne pepper (I did not use any)

1 tbsp corn-flour
1 tbsp extra vinegar

1) Peel and shred the onions
2) In a large saucepan sauté onions till soft and clear (they need to be cooked first and alone other wise they catch your breath and never taste as if they are cooked).
3) Add the vinegar, salt, sugar, spice and cayenne.
4) Peel and shred (grate) cooked beetroot.
5) Then add shredded (grated) beetroot to the onions and boil for about 15mins.
6)Mix corn-flour and extra vinegar together. Stir into relish to thicken.
7) Cook for 3 minutes.
8) Spoon into clean, hot, dry jars and seal.
9) Makes about 10 jars and keeps for months.

4 cucumbers
2 green peppers
4 red peppers
4 onions
1/2 cup salt
3 cups sugar
2 cups white vinegar
1 teaspoons mustard seeds
2 teaspoons celery seeds
1/2 teaspoon turmeric
3 tablespoons cornflour

Prepare the cucumbers,green and red peppers and onions, sprinkle with salt for 1 1/2 hours,then drain off liquid.
Add vegetables to the sugar,seeds and vinegar mix and bring to the boil.
Thicken with cornflour, and a little extra vinegar.

I add a little curry sometimes. Go by taste. A nice pickle will improve on keeping. My chili pickles get way hotter, lol, It is all good.. enjoy
