Preserved Ginger

I am making peach chutney and it calls for preserved ginger, can I use crystilised ginger instead? Thanks

perry43, if your recipe is an 'older' one it could be that crystallised ginger is exactly what is meant.I recall when crystallised ginger was more commonly known as simply preserved ginger, back in the days when the ginger in syrup variety was all-but impossible to source.In either case the ginger is in a sugary environment (preserved in syrup or coated with sugar) so you may not need to alter the sugar quantity very much, if at all.
