Ok, I have only ever had this once in my life - cooked in a vege bake type of dish by a friend and it was bloody awful! ! But, I couldn't resist the colour, shape and price of one whilst shopping the other day. Please share your favourite way to eat these, so it tastes as good as it looks.

biddy6 - there are lots of nice ways to eat eggplant. Perhaps if you start by typing eggplant into the search function on the left of this page & choose 'anytime' - you will find lots of threads with recipes & ideas ... and hopefully you'll find something that appeals to you.
