Zapple. Zucchini made to taste like apple.

I made this today and its pretty good.I made a zapple crumble and told the family that it was our apples off the tree and they enjoyed it, even when I told them it was actually zucchini.

Peel, seed and thinly slice four cups of large zucchini and then simmer in 1/3 cup of lemon juice for twenty minutes, lid on. Add 1/2 cup of brown sugar, agood pinch of cinnamon and 1/4 tsp nutmeg. Simmer for another ten minutes and leave to cool.

I cut the marrow (large zucchini) into 4 ie lengths and then sliced it so it looked like apple.Initially when I was making it and whilst it was still hot, I was disappointed with the taste but when it cooled down it was much better.I recommend that you do not cut it thickly as it doesn't break down like apple does.
Give it a try and maybe like me you will be pleasantly surprised.Next time I will cut it even smaller.
