natural yog, grated cucumber - squeeze out some of the juice so that its not too runny - chopped mint.. just as much as you like of each and if a bit tart to the taste then just add a drizzle of runny honey... enjoy!!

Tzatziki is a creamy, delicious, versatile Greek dip or spread. Great for a dipping sauce to accompany cut fresh veges, fried snacks or spread on bread. Good to take along to picnics.

Prep time:30 minutes
Servings:1 medium bowl

Ingredients:
2 cups Greek Yogurt
1 large Cucumber
5 cloves Garlic, finely chopped
1 tablespoons Olive Oil
Juice of half a Lemon
salt

Directions:
The night before you plan on making your tzatziki you will need to drain the yogurt. Place a damp cloth tea towel in a sieve. Place sieve on a bowl, pour yogurt into sieve, cover with cling wrap and leave in the refrigerator over night. (The cling wrap will stop the yogurt from picking up any smell from the fridge).

Peel cucumbers, cut in half lengthwise, then using a teaspoon scrape out seeds. Discard seeds. Grate the cucumber, discard any juice, place on a tea towel, sprinkle with a little salt and leave to drain for 20 minutes.

Add lemon, olive oil and garlic together in a bowl. Stir in drained yogurt and cucumber.

Serve chilled straight from the fridge. To garnish, top with olives or a few sprigs of fresh green herbs.

Some like to add a little fresh chopped mint to their tzatziki too.
