I have a beetroot.

Need a recipe for a really simple chutney - or relish. Can it just be grated instead of having to cook it whole and dice it?

I listened to an Aunt Daisy recording - amused to hear her say she only gave recipes that she had tried and then she questioned the amount of salt used in the water to cook the beetroot in and decided it must be okay because it was being cooked with the skin on. Tried and tested? :)

1 kg peeled beetroot
750g peeled onions
1kg sugar
1 dsp salt
1 dsp allspice
75mls malt vinegar
2+1/2 heaped Tblsps cornflour

Mince beetroot and onions, add sugar seasonings and vinegar. Boil 20 minutes. Thicken with cornflour.Boil for another 5min

I haven't made it, but it's from that wonderful Rural Womans recipe book called A Good Spread,it's bound to be tried and tested many times,,,,so I hope it's nice

I think the recipe requires 750mls of vinegar. :)

Might use wheat flour instead of the cornflour.
