Ok ladies...How do you make your cake icing?

klavier, Jan 8, 8:45am
I am the worst baker in the world...and even worse at icing cakes. But it's my little boys 1st b-day party tomorrow...and I'm looking to find the best way to make icing for cupcakes.

Everything I've attempted before...either turns out too buttery, or too soft, or just simply slides off the cake and doesn't spread easily.

Help?!!! :) :) :)

butter, icing sugar (food colouring or cocoa depending on what sort of flavour you want) couple drops vanilla essence and milk.Beat like crazy with an electric beater

Take about 50 - 100g butter and beat it very well. SLowly add icing sugar and beat it well - it should be thick and at the turning white stage. Add your flavouring (cocoa or colouring) and my secret is to add a bit of cream if it's too thick. Don't beat it too much after you add the cocao as it will continue getting paler

rub soft (NOT melted) butter into icing sugar. Add lemon juice and electric beat for 5 mins. Or add cocoa and beat or any other flavoring you like:)

Light, soft and creamy :)
