I am making non alcoholic punch for a crowd -could be up to 1000 people! So can I freeze the basic punch base ie tea, fruit juices etc and defrost to add the lemonade, gingerale and fruit. I have the necessary plastic buckets and ice cream containersand a freezer but not sure if this would work.

there should be no problem and if you freeze it down to icecream container type size then just put each one in the punch bowl semi frozen and then it will keep the drink cold without you having to add ice to it.
