i just ate a kilo in under a week here and it was a few days old when i got it, mine was smoked though so i think it lasts longer?

wrap it in a tea towel that has been soaked in water and a little bit of vinegar and wrap that around the ham. and it should keep for just over a week. Re-dampen the teatowel every day or so.

Depends how much one will eat and still thinking perhaps may not eat it so quickly, perhaps then one could cut off a reasonable size chunk, wrap it in plastic wrap and freeze that portion.

Then when one is ready to have more, simply defrost as normal as one can before eating, (mind you, it is quite nice even still slightly partially chilled).

Oh, one can also cut out the bone with a wee bit of meat, (that is very close to the bone) and freeze it for later use in Pea and Ham Soup, it is lovely.

One can then wrap meat as noted above post - store in gridge and still freeze a portion as noted if sufficient.

Hopes this helps.

Cheers.
