Make it into a salad by adding some lemon juice, extra virgin olive oil, garlic, salt and pepper.

A favourite in this house is cooked Silverbeet mixed with mashed potato (2/1 P/S) then seasoning. Then form into patties dip in beaten egg then breadcrumbs and fry in butter. Great for lunch from last nights leftovers or with dinner.

cut pocket in chicken breast, stuff with the silverbeet then wrap bacon strips around the breast and secure with toothpicks, pan fry and serve with a hot tomatoe sauce - which can be pasta sauce/fresh or tinned toms pan fried.
