Choc Eclairs, filled with Caramel ...

I saw a recipe a few months ago and cant remember if it was in a Magazine or on TV, but i do remember it was a NZ recipe, for Chocolate Eclairs filled with cream and a dolop of caramel. Has anyone got this recipe or have any suggestions of how to make the caramel for a good consisitancy?

I use condensed milk - slowly simmer a sealed can in saucepan of water (ensure it is covered with water at ALL times) for approx 3 hours thenh cool before opening- thick yummy caramel sauce - much nicer then the one you can buy already done

You can by condensed milk already caramalised now. It should be next to it in the supermarket. Not sure if it is what you are wanting, but think it would work as quite thick. Beats the boiling the can for ages method.

The ready made stuff is revolting...stick with the method in post 2
