Spring onions

I have often wondered how much of the spring onion I can use. I trim the roots off and generally throw away when I get to the leaf bit. So really only using the white solid part. Seems like such a waste. Should I be using the whole spring onion, white part and green leaf part?

The green part is fine - it isn't as crisp as the white part but tastes the same.

I use the lot, apart from the roots and the top part of the greenery

Did you know if you grow your own spring onions you can cut them about 1 cm above the ground and they will regrow.

I use all the spring onion also other than the roots of cause
