Peas & asparagas salad help please.

I want to do something different for xmas bbq. Do peas,asparagas,red onion make anice salad/ Want to make it today so how would it go if I cooked the greens,added the chopped Red onion then tomorrow just sprinkled it with a vinegarett? perhaps there is a better chioce of dressing and do I need o add other ingredients to the greens.

Don't add the onion in advance as it oxidises and changes taste as soon as you cut into it.Add it at the last minute.

If it were me I'd probably add some fresh mint to that - probably choose the young, small tips and cut up very finely, with Italian parsley - use the parsley stalks as well because they pack a real flavour punch.

A vinaigrette would be fine, or I would think about a creamy dressing:

1 tab white or tarragon wine vinegar
4 tab olive oil
2 tab crème fraiche
20 leaves of basil or a handful of tarragon or mint
pinch of sea salt
black pepper

Make dressing by mixing vinegar and salt, gradually beat in oil and crème fraiche to make creamy dressing, tear basil leaves (or chop tarragon or mint) and add with pepper.

This would be good throwing in some feta and mint along with peas and asparagus. Could be mighty fine!
