Pork crackling

What is the best way to make nicr crackling on the pork please

before roasting, score the skin with a knife (has to be really sharp), rub all over with oil and then rub salt in.

Cut it off the meat, place on a rack above and cook - watching it as it will be quicker than the meat. It crackles best without moisture - so removing it from the meat solves everything. Don't need to smear with anything. Scoring it just stops it curling up.

I finish mine in the microwave on high for a 2 to 3 mins, heatproof dish and handy towels to stop the splatters. It goes really crunchy but with out the jaw breaking tooth smashing results. Keep an eye on it as you can over cook it and burn it
