I've found if you add sugar slooowly it helps

I also left it to cool in the oven as others have said?

I found that if the sugar does not dissovle in the mixture when beating, it sinks. Normally a pav you would beat for around 20 - 30 minutes to make sure all the sugar is dissolved. I make this one and do not have problems with it. I have a mixer so it takes 15 mins however with an electric beater, beat for about 20 minutes.

6 egg Whites,
1&1/4c castor sugar
2 teaspoons Cornflour,
2 teaspoons White Vinegar,
2 Tablespoons Boiling water
1 tsp vanilla

Beat the FIRST FOUR Ingredients together while boiling the jug. Add the Boiled Water and vanilla. Beat until thick and smooth (approx 15 mins). Pile onto a baking Paper lined oven tray (pile thickly NOT widely and flatten the top slightly). Cook for 2 mintues at 200 degrees C, then turn down and cook a further 1 hour at 100 degrees C. (Leave in oven overnight to cool)

i love alton i have every single one of his DVDs and books
pretty sure he hasn't done a pav episode but his meringue one (I Pie) is very good and has alot of tips you can take on for pavs

and funnily enough his very next episode after the holidays will be on Meringue Based Desserts too
