Silly question-How do you melt chocolate

For dipping etc?

Everytime I try to do it it separates and goes all weird.

very slowly, in a bowl over a boiling pot of water, don't let the bowl touch the water tho.

Sounds like you overheated it.

Try it in the microwave on low, stir it often and when it's nearly melted take it out and stir with a fork until it's smooth.

Please don't use boiling or simmering water - the steam is very likely to get into the bowl of chocolate and cause it to seize.....Boil the water in a saucepan, electric jug or kettle, then remove the water from the heat source and place the chocolate, broken into pieces, in a bowl over the boiled water ensuring that the bottom of the bowl does not touch the water.If using the chocolate for dipping or chocolate making and it begins to set before you've finished, remove the bowl from over the water, reheat the water or use more freshly boiled water, then return the bowl to being over the just boiled water and continue, ensuring that the chocolate does not get too hot, but just hot enough to not be setting.

And definitely not "a silly question", karlandkellarni.The problems you have experienced are really quite common and if you're having problems or are not sure, no question is ever a silly one - so long as you don't allow any water or steam to get near the chocolate and you don't overheat the chocolate you should be ok.Good luck.:-))
