Verde Spicy Fruit Slice

l made this recipe from the Sunday star times a few weeks back and it is really nice and has the Christmassy feel to it so thought l would post for you all to enjoy it is really nice

Verde Spicy Fruit Slice

Ready rolled sweet crust pastry
1kg fruit mix (l used fruit cake mix)
170g craisins (sweetened dried cranberries)
1 cup sugar
1 dessertspoon mixed spice
1 dessertspoon cassia (cinnamon)
2 sliced apples (skin on, roughly chop) l used granny smiths
3 cups water
1/2 cup cornflour, dissolved in 1/2 cup water

Topping
1 egg
100mls cream
demerara sugar(optional)

Heat together fruit mix, craisins, sugar, spices and apples in the 3 cups water, until sugar dissolves
Thicken with the cornflour and water mixture
Line the bottom of a 22cm x 32 cm lamington tin (high-sided) with ready to roll sweet crust pastry
Pour the fruit mix over, then layer the top with sweet crust pastry
Mix together the egg and cream and spread on top
Sprinkle with demerara sugar(optional)
Bake at 160C fan bake for 40 minutes
Note the slice cuts better if chilled overnight

Lovely as a slice or pudding with a dollop of greek yoghurt

l hope you enjoy it as it makes a good sized pie and l am not good with pastry but everyone loved it and l have some really honest critics round here so if it passes them it is worth making again
