hy every one merry christmas to all does any one out there have a recipe out of the old edmonds book of a christmas pudding with carrot in it cheers snowf

Found this one on a cooking website, have checked all my old edmonds books but couldn't find one with carrot. The older books have about 4 Christmas Pudding recipes.

125gr butter
1 1/2 cups grated apple
3/4 cup raisins
1/2 teaspoon nutmeg
1 1/2 teaspoons baking powder
1 1/2 cups plain or wholemeal flour
1 cup brown sugar
1 cup grated carrot
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 1/2 teaspoons cinnamon

Cream butter and sugar, add apple, carrot and mix well. Add rest of ingredients. Steam in greased pudding basin, with lid on, for 2 hours. Lovely with custard or icecream.

Is this the Edmonds one you've used.. it's delicious:

Spiced Carrot Fruit Pudding:

Preheat oven to 180°C (350°F)

1 cup flour
125g (4oz) sugar
1 teaspoon cinnamon
1 teaspoon mixed spice
1 cup grated carrot
1 cup mixed fruit
1 tablespoon butter
3/4 cup milk
1 tsp baking soda

Mix dry ingredients, except soda.
Add carrot and fruit.
Melt butter, add milk and soda.
Add to flour mix.

Place in a greased bowl, place in oven with a dish of hot water and bake 1 hour.

ps.. you can steam this recipe too.. in a covered bowl - and steam for 3 hours.
