Prawns

I am making a platter of prawns and dipping sauces for an event.I want the tails on, but they will have no shell so they can be popped int he mouth - easy!My question: if i buy raw prawns and cook them as i have done before, they don;t seem to be as sweet and fleshy as the pre cooked ones.So do i just re-fry all ready cooked ones?
Maybe i am not cooking the raw ones enough???Oh and any ideas for a good dippy sauce?

Seafood Sauce
For cocktails..crayfish..prawns.. crab.. oysters..fish..mussels..~ Use store bought or home made aioli
Ingredients:
1/2 cup aioli..1/4 cup tomato sauce..worcestershire sauce..tabasco sauce..1/4 cup cream horseradish..zest1 lime ,1 lemon..salt and pepper
Method:
Mix all well together, taste test and cover.
Will store in fridge for a week

I have found in Christchurch that the quality of raw frozen prawns does depend on the brand.I never buy the pre-cooked ones so can't comment on that.
