One of the local papers here (the Tribune in Palmy) had a recipe last week for Peppermint rolls, that had a biscuit base, then white icing, rolled up so that when it was sliced it looked a bit like a swiss roll (only much cooler...) I saved the recipe, but DH has filed it in the rubbish -sigh- does anyone have a recipe for this?

Whizz 1 250g packet of superwine biscuits, add 1 cup of cocoa and 1 cup of boiling water and 1 cup of icing sugar mix. Roll out thinly between 2 pieces of cling film (glad wrap) place in fridge to chill. Icing: 1 cup of icing sugar, 50 grams of melted butter, 2-3 cap fuls of peppermint essence. Mix together like an icing and spread on to the rolled out base, roll into a log and sprinkle with coconut, wrap in cling film and chill before cutting
