Brandy Butter..............

I'm making some yummy treats for mum this chrissy and thought you guys might like this recipes:makes approx 2 cups.

150g unsalted butter, softened
1 and 2 thirds cup of icing sugar
50g ground almonds
2-3 tablespoons brandy to taste

Cream butter with electric beater until light. Add icing sugar, a spoonful at a time and beat till pale and fluffy.

Using slow speed mix in the almonds and then the brandy, abit at a time untill combined.

Spoon in sterilised jars that have cooled down(not hot jars.!)

And then refrigerate.Any left over mixture can be formed into logs or make shapes using a piping bag and wrap in plastic or greaseproof paper.

Great for serving with christmas puddings, christmas mince pies, baked apples filled with spices..........yum:=)

Sounds yum - I wonder if you could use normal butter - I generally don't buy the unsalted stuff.

I don't see why it wouldn't be the same with normal butter.

Just made a second batch for my neighbour who loves christmas pudding.............hope its ok..!

Had a pre xmas treat for me tonight and used some of the brandy butter..............what a mistake its so yummy....but not good for the tummy...lol
