This happen once before.I reboiled the Marmalade and it turned ahorrible dark golden colour. What can I do to get it to set without changing its colour ?

What about using Jam Setta (or some such name) - it is usually in supermarkets in the baking aisle.I believe it is the tartaric acid that makes it set- so unusual your marmalade hasn't set with its high acidity. You will have to reboil it to add the jam setta, but just don't leave it too long - or try the microwave, I find the heat isn't so intense - just remember to stir frequently.

Place it back into the pot, and bring it to a boil very slowly, stirring often so it doesn't stick to the bottom of your pan.. then keep at a rolling boil until setting point is reached..

Marmalade usually sets very easily due to it's high acidity level..to speed up the process, you could add the juice of a couple of lemons or slightly greenish looking oranges..

Good luck :-)
