High grade will suffice,otherwise "00" is what is used.

thanks...that is what i had thought....any ideas of an approximate quantity of flour to 1 egg....i only want a small amount of dough as there are only 2 adults and one child.....many thanks.

thanks greerg...and do you think it will be enough to feed the 3 of us?....i hate food waste yet dont want to feel obligued to eat it all...i know it can be frozen or dried but not into that just yet.

It's 1 cup of flour to two eggs. Makes enough for two people.
