i still got a small jar that has been kept in the fridge, yes it has brandy in it and has been sealed with alum foil on the top. Do you reckon it would still be ok?

It will be beautiful! The longer you leave it preserved in the brandy the better it will be. I make mine years in advance and it pops and fizzes like champagne!

Yep, I had mine well over 18 months and it was perfect. It had plenty of brandy in it.

aewsome - mince pies here i come! but the issue i have is that its sooooo difficult to get the mince pies out of the muffin tins once they are made... any ideas on what i can do to get around this issue?

Buy new tins and don't use spray on them if they are non stick. Non stick spray destroys non stick pans in my experience.

Personally I use patty tins. Easier to get them out.

I used to have this problem even with the most careful spraying but my new purchase of a circulon pan has meant 6 dozen perfect pies with no greasing at all.I love these and plan to acquire more.
