Parsley Pesto

I am looking for a Parsley Pesto recipe so I couldmakeand give in a Christmas box. I would like to use cashew nuts in it. Have had a quick look on google.Thanks

Don't see why you couldn't whiz the parsley with toasted cashew nuts, parmesan cheese and olive oil.....pepper and salt. Make sure you put instructions about refrigerating it on the container etc. Make a small batch as a trial for yourself.

I like this one...using flat leaf parsley though:

50g block parmesan cheese
50g cashew pieces
Large bunch Italian flat leaf parsley
Olive oil - approx 1/4 cup
2 large cloves of garlic

Blend the cashew pieces, cheese, garlic and parsley in a food processor or blender.Add the oil slowly until it comes together and falls off a spoon.You may need more oil or less than 1/4 cup.

Yep the curly parsley tends to make a very rough, coarse pesto.
I sometimes add a little lemon zest.
