what is the best way to store fresh ginger? pantry, fridge or freezer?

In the vege drawer of the fridge in a plastic bag.It will keep for several weeks if it was in good condition when you bought it.

Unpeeled in the fridge, it will last about three weeks. if you want to freeze it, you certainly can, so long as you leave it unpeeled, it will last frozen for up to six months.

If I buy more than I can use within a week or so, I peel it & put in a small jar covered with white wine & it lasts for ages in the fridge.
Read it somewhere years ago & it works.

If you freeze the whole lump skin and all, grate off what you want (skin and all) while frozen, and place back in the freezer again for next time

We peel ours then pare it (with the spud peeler) into slices which we store in the fridge in a screwtop jam jar of sherry. Keeps for months and months, if we haven't used it in Asian recipes before then - sherry and all!
