Muffins

Hi - can anyone give me a suitable muffin recipe for a diabetic please. TIA.

I have not tried this recipe but it is from a diabetic book
Crunchy Apple filled muffins
1 cup wholemeal self-raising flour
1 cup self-raising flour
1 tsp cinnamon
1/4 cup brown sugar or low-cal sweetener
1 egg lightly beaton
250ml buttermilk
2 TBLSP oil
200gm can pie apple
2 TBLSP raw rolled oats
1 TBLSP brown sugar
Preheat oven 190. spray or oil muffin tins. Sift flours and cinnamon into a bowl, stir in the brown sugar or sweetener and make a well in the centre. Whisk together the egg, buttermilk and oil, pour into the well and fold in gently until just combined. Half fill each muffin hole using half the total mixture, top with a spoonful of pie apple then fill with the remaining mixture.Sprinkle the combined rolled oats and sugar over the top and bake for 20 min. or until risen and start to come away from the sides of the tin. Allow to cool a couple of minutes before removing to a wire rack to cool.

Alison and Simon Holst wrote a book called "Healthy Muffins" that you can possibly find in your library. From memory it gives nutritional values for the muffins as part of the recipes. A lot of them freeze well too.
