Recipe for Hotcakes?

Hi All,I'm looking for recipe for light and fluffy hotcakes/pikelets like McDonald's breakfast menu hotcakes? I already have a lovely pikelet recipe, but the kids are mad for hotcakes at the moment, so I thought I'd give them a go.I know you can buy packs of mini hotcakes at New World, but why buy if I can cook them? LOL thanks in advance.

Haven't made these in a while but they are good!

1 1/2 cups flour
1 tablespoon baking powder
pinch salt
1 teaspoon sugar
2 large eggs - beaten
2 tablespoons melted butter (cooled)
1 1/3 cups milk

Mix dry ingredients together.Add wet ingredients.Mix adn leave for 20 minutes before cooking pancakes.

Pikelets / Hotcakes

1 cupFlour
1 tspCream of Tartar
1 tbspSugar
½ tspBaking Soda
¾ cupWarm Milk (use 1/2 cup buttermilk and 1/4 cupmilk instead for a lighter pikelet)
1Egg
1dspnMelted Butter

• Mix the first three ingredients
• Dissolve the baking soda in the milk, add egg and beat.
• Mix milk mixture into the flour mixture.
• Stir in butter.
• Drop spoonfuls onto a hot buttered pan to cook.

These are more like hot cakes
