Preheat oven to 190°C. Sift flour, caster sugar and icing sugar into a large bowl. Add almonds, coconut and lemon zest and juice. Whisk in egg whites and butter (mixture will be runny). Spoon into well-greased shaped pans, a muffin tray or friand moulds and bake until golden around the edges and just set, about 15 minutes. Cool 2-3 minutes then carefully remove from tins while still warm.Makes about 14
