what receipe they use for the muffins you buy at countdown.want to make some.any sort though.they are always so light.

i find that when making muffins its in the mixing. Never mix the wet and dry mixture too much my nan told me, only let them bond. a purfect result every time

In the search function , on your left , Write ... pickles7... on the key word member space, and scroll down to ... anytime ... on the date posted,. You may find what you are looking for there
a few muffin recipe's in there, they never fail for me.
Countdown would use a pre mix, I would think.

Put the baking powder in last, it hates being over-mixed, and put a LITTLE bit extra in.
Hard mixing is baaad.

i think youll find that all supermarket muffins are made with a pre bought mix so they will never be quite like ones from scratch. edmonds muffin mix is the closest you just add ingredients to make your own flavour, they are very light but its a real cheat!!

Most commercail muffins such as those from Countdown or Muffin Break use a commercial pre-made "mix" that they add wet ingredients to to make their muffins.
