Is it suitable for whipping after being frozen or just good for baking?

only good for baking I think - it separates. You can freeze whipped cream though - I think it was here someone said to pipe it in little blobs, freeze on a baking tray, and then you can pop the little blobs on top of coffee when visitors come. Thought that was nifty.
