Nachos

Ok, so I've never made nachos before (with meat), so just wondering how to make them.

Brown onions, garlic (if you wish), mushrooms, finely cut up shaved ham (or bacon, or not ...). Add to mince that you have already browned. Back into the pan or a pot and add in a tin of tomatoes, or tomato paste and water if you prefer, and/or a tin of mexican chini beans.

Are you getting the impression that anything goes?? I tend to use all of the above for interest and to make the mix go further.Then for dressing it .... mushy avocado and/or sour cream (not for me!), and/or grated cheese ... again, whatever you fancy.

This is my chilli recipe it is great as nachos too:
500g Mince (beef or a mix of pork and beef)
1 chopped onion
2 cloves garlic chopped
2 Tbsp Tomato paste
1/4 C tomato puree
1 - 2 tins savoury tomatoes (they have added capsicum)
1/4 Tsp Cumin (optional)
1 glass red wine
salt and pepper
1/2 packet Old El Paso chilli mix
1 Tsp sugar
1 Tin Mild chilli beans
2 sticks celery
1 carrot
1/2 red/green capsicum

Brown mince, fry onions and garlic.Put in slow cooker (or heavy based pan).Fry off tomato paste, add to mince mix.Pour glass of red wine into pan to rinse out (deglaze).
To mince mix now add all other ingredients except beans.
Cook slowly for 1 hour or in slow cooker for the day.Add chilli beans about 1 hour before the end - if cooking in slow cooker, or add at the beginning for the pot method.
This is so thick and rich and moreish, you can adjust the heat yourself by adding more chilli mix.

This makes a good sized batch - is even better the next day served over a baked spud.

my simple one is one can of chilli beans, one can of flavoured tomatoes usually mexican and fried off mince, about equal quantities, extend out to the crowd you are dealing with

Yep Watties mexican tomatoes, red kidney or chilli beans, 1/2 sachet Old El Paso chilli seasoning and mince.Then grated cheese, sour cream and the corn chips.I like to add the cheese then melt under the grill before adding a dolop of sour cream.
