Depends on how you want to cook it (roast, pot, crockpot).

Oven is a bit early - but crockpot would be fine on high.

I would roast it for about 5 hours at 150C.Salt the pork well all over and balance it in a roasting tin on some 1cm slices of onion, some bay leaves, thyme, rosemary sprigs if you have them.Pour some water or white wine underneath.

If you want roasted root veges put them in for the last three hours.

If you want crackling grill the skin at the finish - watch it very carefully as it will burn easily.

Pour the juices and onions etc through a sieve and serve the liquid as a sauce.

Yes it would - or put it into the crockpot with red wine, onions, garlic and thyme and rosemary :) That's how I do my old kunes.
