Perserving Fruit question please ...

I'm wanting to bottle some lovely summer fruit this year, both for gifts and for my family, some flashed up with brandy and others just plain in the syrup.My question is this ....

Do I have to cook the fruit first ??or
Can I use raw fresh fruit and pour the syrup over and bottle

I always cooked mine although I freeze them now. I cooked the fruit gently in the syrup when cooked poured into hot jars run a knife down the sides to get all air out make sure you overflow then screw on lids turn upside down and wait for them to seal. I always loved doing bottling. Good luck

You can use raw fruit if you intend to use the water bath method which is how you get bottles of beautifully arranged fruit.Arrange halved fruit in concentric circles in the jar.Fill jar (but do not overflow) with boiling syrup.The jars are then placed in a water bath, or very large pot and cooked.
