nibbles for outdoor wedding (no kitchen facilities) to have with drinks between ceremony & reception. I am after bite size nibbles that can be served cold

Always goes down a treat - bilinis or bite size rye bread or similar with cream fraiche/cream cheese and smoked salmon with lemon juice, black pepper and dill. Yum

Bite size sandwiches are always popular. Make usual club style sandwiches & cut them in half again - 6 pieces for each round of bread. Mini bruschetta, crostini, ham & egg savouries, sushi. Make omlette/pancake style rolls filled with cream cheese & roasted red pepper (or filling of choice), self crusting 'quiche' cut into bite size pieces. Just be aware of fillings that will hold safely without refrigeration.

Don't do anything with filo, people just make a mess, lol.

For your sweet thing (depending on the season), why not just go all simple and do chocolate-covered strawberries? That'll go well with drinks and bubbles, and everyone likes them. And they're easy.

Simple to make and look a dime on platters hoisin pork on wedges, camembert mushrooms, chicken & avo mini rolls, tomato bocconcini bites, bugs n rugs, cheerio butterflies, Thai fish cakes, cheesy dates, cucumber & chicken bites. And very suitable and tasty cold too.

Nutella biscotti

If you want to make your own tasty sweet snack, here's the recipe.

Ingredients:
2 1/4 cups all-purpose flour
2 tablespoons cocoa
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 large eggs
1 cup sugar
1/2 cup Nutella
1/2 cup chocolate chips
1/2 cup hazelnuts (optional)

Directions:
1. Preheat oven to 350°F.
2. Sift together flour, cocoa, baking powder, baking soda and salt in a medium bowl.
3. Beat eggs in a large bowl until frothy.
4. Add sugar and continue beating on high for 2 minutes.
5. Stir in Nutella.
6. Add flour mixture to egg mixture and stir until well combined.
7. Stir in chocolate chips and hazelnuts, if using.
8. Divide dough into 2 or 3 logs with well floured hands and arrange on a parchment lined baking sheet. Press logs into rectangles approximately 1/2 inch thick.
9. Bake at 350F for 20 minutes.
10. Remove from oven.
11. Turn down oven heat to 300°F.
12. Using a serrated knife, cut logs into 1/3-1/2 inch slices. Arrange on baking sheet and return to oven.
13. Bake for 10-12 minutes, turn biscotti over and bake an additional 10-12 minutes (depending on the thickness of your slices).
14. Remove to a wire rack to cool. Store in an airtight container.

APRICOT PISTACHIO SLICE 1 cup of loosely dried apricots, 1/2 cup of pistachio kernels 500grams of dark chocolate chopped 100 grams of butter 1 can of condensed milk small one 395gr, 1/2 cup of strand coconut... ... melt the choc, butter & con milk stirring well, cut up the apricots & pistachios and add to the melted choc mix, pour into a lined and greased 24cm loose bottom tin and refrigerate this when cut should give you 20 slices

Caramel Ginger Balls

Ingredients:

1 Packet Griffin's Gingernut Biscuits (crushed)
½ Cup Desiccated Coconut
½ Cup Crystallised Ginger (chopped)
¾ Cup Sweetened Condensed Milk
1 Cup White Chocolate Melts
Extra Desiccated Coconut

Instructions:

1. Combine the crushed biscuits, coconut and ginger in a medium bowl.

2. Place the condensed milk and white chocolate melts in a medium saucepan.

3. Cook over a low heat until the chocolate is melted.

4. Using moist hands, roll the mixture into small balls and then roll in the extra coconut.

5. Refrigerate for at least ½ and hour.

Chocolate Pate:

70g brazil nuts coarsely chopped(aka bang the shit out of them with a hammer lol)
70g hazel nuts coarsely chopped
2 slices glace pineapple chopped(optional)
50g dried apricots chopped
125g shortbread biscuits broken(aka bang the shit out of them with a hammer! )
180g dark chocolate broken(I just used chocolate chips)
2/3 cup sugar
4T water
1C cocoa
180g butter, softened
1T brandy(or essence of your choice)
1t grated orange rind
1t grated lemon rind
1 whole egg
2 egg yolks, beaten with the whole egg.

Base line a 23x10cm load dish with plastic wrap
Melt chocolate on high for 1. 5-2min. Stir
Place sugar and water in a jud and microwave on medium for 2min, stirring once.
Combine softened butter and cocoa until smooth. Add to this mixture the sugar syrup, melted choclate, brandy, grated rind and eggs.
Mix thoroughly, then fold into the combined nuts, biscuits and fruit. Spoon into the prepared load dish, pressing well down and smooth the surface. Refrigerate, covered, overnight. Store in refrigerator

I make mini quiches;
Get some puffed pastry and cut circles out of it using a cup. Place each circle into a muffin tin and then add chopped herbs or whatever filling you want. Then cover the filling with an 2 eggs mix with a dash of cream. Spoon the egg mixture in and then bake at 220 for 5 to 10 minutes.

I can make hundreds of these in an hour. Literally hundreds :)

Daughters wedding 18 m ago was at an outside venue with drinks and nibbles before the reception and while the wedding party went away for photos. Bubbly and juice were passed around and the caterers had several tables set up under the trees with a hugeand I mean huge platter on each table with cold cuts like salami, chorizo, pastrami, ham off the bone in small pieces, smoked salmon, lots of different cheeses and pickles- baby gherkins, tiny sweet pickled white onions, and several different dips with a selection of good breads and biscuits. Had lots of favourable comments about both the quality of the food and the fact people could just go and help themselves as they wished.
