Caramel Ginger Balls
Ingredients:
1 Packet Griffin's Gingernut Biscuits (crushed) ½ Cup Desiccated Coconut ½ Cup Crystallised Ginger (chopped) ¾ Cup Sweetened Condensed Milk 1 Cup White Chocolate Melts Extra Desiccated Coconut
Instructions:
1. Combine the crushed biscuits, coconut and ginger in a medium bowl.
2. Place the condensed milk and white chocolate melts in a medium saucepan.
3. Cook over a low heat until the chocolate is melted.
4. Using moist hands, roll the mixture into small balls and then roll in the extra coconut.
5. Refrigerate for at least ½ and hour.

Chocolate Fruit Balls
125 g Dried apricots, chopped 1/3 c Raisins, chopped 1/3 c Sultanas, chopped 2 ts Grated orange rind 60 g Dark chocolate, grated 180 g Dark chocolate, extra 60 g Butter
Combine apricots, raisins, sultanas, rind and grated dark chocolate in a small bowl. Roll teaspoons of mixture into balls, refrigerate overnight. Break extra chocolate into pieces, place in top of a double saucepan with butter over simmering water. Stir until smooth or microwave on HIGH for 2 minutes. Dip each fruit ball in chocolate until evenly coated. Place balls on foil-covered trays; allow to set in a cool place. Store balls in airtight container in refrigerator.

225g butter, 3/4cup white sugar, 3/4cup brown sugar, 1tsp vanilla essence, 2eggs 2&1/2cups flour, 1/2tsp salt, 1tsp baking soda, 1 cup choc chips... cream together butter and sugars until light and fluffy. add vanilla eggs 1 at a time. Mix together dryingredients except choc and addtobutter. Stir. Add choc. Stir. Place large spoonfuls onto prepared trays leaving heaps of room for spreading. Bake at 180c for 15minutes

White Chocolate Apricot Balls
A delicious combination of white chocolate and apricots, these are a great alternative to dark chocolate sweet treats and will prove simply irresistable to lovers of Griffin’s Super Wines.
Ingredients:
½ Packet Griffin's Super Wine Biscuits (crushed) 250g White Chocolate (chopped) 250g Dried Apricots (chopped) ¼ Cup Ground Almonds 1 tsp Brandy Essence ½ Cup Cream ½ Cup Coconut
Instructions:
1. Combine apricots and brandy essence in a bowl and stand for 10 minutes.
2. Place cream in a small saucepan and bring to the boil, take off heat.
3. Add chocolate, stir until melted.
4. Add apricots, almonds and biscuit crumbs, mix well.
5. Refrigerate until mixture is firm enough to handle.
6. Mould into small balls then roll in coconut.
7. Refrigerate until ready to serve.

gingerbread
This recipe makes great crunchy gingerbread men. You could also use this recipe to make gingerbread hearts for Valentine's Day, gingerbread four leaf clovers (with green icing) for St Patrick's Day, or gingerbread butterflies for a girl's birthday party. Make a small hole at the top of the gingerbread men using a skewer before baking and you'll be able to thread ribbon and hang from your Christmas tree. Decorating the gingerbread at the end is super fun for kids and will keep them amused for a good hour or two on a rainy day. Prep time:10 minutes Cook time:8 minutes
Directions: 1. Melt butter, sugar, and golden syrup in a pot over low to medium heat. Preheat oven to 180 degrees C.
2. Beat in egg yolk and sift in dry ingredients.
3. Knead and roll out to 1/2cm thick. Use cookie cutter to cut out shapes.
4. Place shapes on baking tray on top of baking paper.
5. Bake at 180 degrees C for about 8 minutes. They are done when the edges are golden brown.
6. Remove from oven and allow to cool on rack before decorating.
To make it really fun for the kids, create several different coloured icings and have a variety of sprinkles, sugar balls and mini M&M's on hand. Use the icing to stick the decorations to the gingerbread.
Combine water and butter and stir in icing sugar. Divide mixture and add a drop or two of food colouring. You can make icing bag by placing some of the icing in a small plastic bag (such as a plastic sandwich bag) and cutting a very small hole in one of the bottom corners.

M&M bickies
3/4 cup marg or butter softened 1/3 cup sugar 1/3 firmly packed brown sugar 1 egg 1 tsp vanilla essence 1/3 tsp baking powder 1 1/3 cups flour pinch salt 1 x pkt M&M's mini baking bits OR mini M&M tubes from shop
preheat oven to 180oC cream butter and sugars until light and fluffy. Beat in egg and vanilla. In separate bowl sift together dry ingredients. mix all together. stir in M&M's. .
drop tablespoons onto greased or lined oven tray. Bake for 10 - 13 mins until edges are lightly brown and centres are still soft. DO NOT OVERBAKE cool for 1 min and eat

russian fudge
1/2c milk (not trim! ! ) and 3c sugar slowly melted tog (can take 1/2hr +) then add 125gm butter, 1/2 tin cond milk, 1 Dspn golden syrup. Bring to boil and slowly boil until soft ball stage (when small amt of fudge put in to cold water can be rolled in to a ball that holds it shape) - when at soft ball stage take off heat and leave 10mins. Add 1/2 - 1 tsp vanilla and beat until thick and glossy - pour into a tin and cut when set

those mellowpuff xmas puds are fun and easy to "make" with kids pour some melted white choc on top of a mellowpuff, put a jaffa and 2 green leaf lollies (I couldnt find any so I just used green winegums cut in half) they look super effective!

Coconut Ice done in the microwave so easy and my kids would make this all the time. Great to give the grandparents for a gift. I would double the recipe. . one for each colour 4 cups icing sugar 100 gm butter 1/4 cup milk Microwave above for 4 min Beat until smooth and add 1 1/2 cups coconut and vanilla (1 or 2 drops) Pour 1/2 of mixture into tray and colour other half and pour on top.
Nice and creamy and very quick to make.
