so if I boil them up with some onion, carrot & celery, will I have a good stock for soups etc?

yes, you could also add bouquet garni for extra flavour.

Don't waste them in soup. Cook in the oven. Yummy for nibbling.

boil them up and then coat them in 'Char Sui' sauce and bake til very brown around the edges - very yummy! ! !
