mini jelly/sauce recipes?

Has anyone got some good mint jelly or sauce recipes? How long will this sort of thing store in the fridge for also?

mint jelly- 1 cup firmly packed mint leaves - 3/4 cup white vinegar - 3/4 cup water - 31/2 cups sugar - 1/2 cup liquid pectin - boil mint, vinegar, water & sugar in pot, stirring till dissolved. simmer 4 mins. stir in pectin and boil briskly 1 min. strain. pour into sterilised jars. Makes 3 x 250ml jars.

Mint sauce - 1/4 c chopped mint leaves - 1/2 c malt vinegar - boiling water - salt - 1 tbsp sugar- Put mint in jug, cover with boiling water, add sugar and vinegar, add salt to taste. Makes 1/2 cup. This sauce is made to use that day.

I do that mint sauce - it's the best thing ever.
I was taught to put the mint and sugar in together and smash it about to bruise the leaves then add the hot water to dissolve the sugar and then the vinegar.
Do you shred the mint or finely dice it?
I'd always finely shredded it but got told off last time I made it (for a different crowd) coz it was too big! I like the straggly bits...
