could make sweet and sour but shesshh thats kinda obvious huh, what else could i do, its flat pork not steaks bit thinner than that but about the same size.

Maybe pound it flatter, put in a nice stuffing mixture of anything you like, mushrooms, onions herbs etc & roll it up then sear outside to seal & either bake as is or wrap in pastry & bake.

sounds yum lavender, but am gluten free - could stuff it but i dont like gluten free pastry!

Do a pork saltimbocca... pound thinner, lay some shaved ham ( or proscuitto if you can! ) on top, a couple of fresh sage leaves and roll up then toothpick. Panfry gently then use pan juices to make a sauce with some white wine, brandy or madeira along with a splash of cream.
