Pickle cabbage

Hi, can any one tell me please how to pickle red cabbage?

Pickled Red Cabbage
1. 5 kgs red cabbage
1/4 cup salt
3 cups malt vinegar
3 teaspoons whole pickling spices
2 bay leaves
1 centremetre piece root ginger
1 sprig fresh dill

Remove ough outer leaves from cabbage. Wash thoroughly and shred finely. Spread in shallow non-metallic dish and sprinkle with salt. Leave overnight.
Next day turn into colander and drain off liquid. In deep saucepan place vinegar, pickling spices, bay leaves, root ginger and fresh dill leaves. Bring slowly to boil and simmer 3 minutes. Cool, then strain. PAck cabbage , loosely into clean dry jars. fill with cooled vinegar. Cover loosely.
Top up the next day, so that vinegar covers cabbage. Cover with non metallic lids and store in cool, dark place. Ready to use in two - three weeks.
